Off the beaten track in Morocco

I have heard wonderful things about some of the cities in Morocco, with the amazing architecture and markets etc, but I'm curious about whether it is possible to travel off the beaten track in Morocco (that is, I'm sure it's possible but want to know if it's worthwhile)? Are there less 'discovered' gems to explore? And wilderness areas for hiking etc? I would really like to experience a more traditional and authentic side of the country. Any advice much appreciated!

    Morocco still has many unexplored nooks that haven't become touristy and overcrowded. Meknes, situated very close to Fez, is an amazing ancient city which has retained all its mystique and for some reason is not well-known among tourists. There are fantastic hikes in the Atlas and Rif Mountains: Chefchaouen, in the Rif Mountains near Tangier, is a great base for hiking and although Chefchaouen is becoming something of a favourite with tourists it is possible to trek to tiny mountain villages where very little has changed in centuries.     We went to Morocco for Oct half term 2013 - 2 adults and 2 children (9,
    11). I contacted 3 companies regarding a suitable itinerary for a 10
    night trip. Lahcen at Authentic sahara tours was the first to reply and
    with a couple of tweaks we had a bespoke itinerary and quote very
    shortly afterwards. Before we left I changed a few things and it was all
    amended very quickly - and my many questions answered!

    From the
    moment we arrived we knew what we were doing and it all went like
    clockwork with helpful and friendly drivers/guides/riad owners etc. We
    had said we wanted a swimming pool whereever we stayed and I guess we
    were middle + in terms of comfort. We stayed in Riad Anika in Marrakech -
    superb and such lovely staff - and the best breakfasts ever (as voted
    by the kids). Then after 2 nights we headed to the Atlas Mountains and
    the Erg Chebbi Dunes. We had a great time with Aziz the driver who was
    not only a great driver (needed there !!) but also interesting and
    knowledgeable. On long drives he produced chocolate from a fridge in the
    boot (happy kids) and had brought us some wine when we stayed at a
    'dry' Riad. Very thoughtful. We stayed in the Luxury desert camp in the
    desert and the kids sandboarded down dunes while we were looked after by
    a team of Berber 'butlers!' who then turned into drummers when the moon
    came up. All the Riads were great except the one on the desert edge but
    that was just one night and we have fed this back to Lahcen. We visited
    Kasbahs, souks, film sets, gorges, nomads, berber villages and generally
    just had a great time. Ali was very helpful in advising us in local
    areas if we wanted to buy anything or know anything. I would thoroughly
    recommend this firm to anyone looking to go to Morocco.
