proof of onward travel?

I am traveling from Vancouver, Canada to France and plan on taking trains to Italy, and then taking a boat to Greece. In Athens I plan on getting a flight to Mumbai, and then going from Mumbai to Bangkok. When I leave I will have the ticket to France and a ticket from Bangkok back home to Vancouver, but I will have no tickets for the countries in between because I wanted to keep my travel dates flexible. Will the fact that I have a ticket from Bangkok to Vancouver count as "proof of onward travel"? Also, what should I take as proof of sufficient financial funds? Would an official letter from my bank be ok for that?
